I notice that a knock can be heard from (presumably) within the dash that sounds to be originating from the area of stereo/gear knob. Doesn't have to be at high speed to occur and sounds like a decent clunk each time. 2000 fairmont ghia. happens when going over a bump or sudden change in road integrity. Any suggetions or experience with such annoyances?

Possibly the gearbox mount.

Perhaps Fords excellent service department accidently left one of their servicemen in your dash? Maybe hes knocking to get out....
