To be honest I can't remember, I remember the cooked head was in our freezer for months if not years after the night - for some reason we just never got rid of it.

You'd have to gut it and then fill the cavity with some kind of stuffing/ something to keep the moisture.

Your best bet is to possibly wait for a good ocassion, somebodies 21st/40th etc and then get professional caterers in to do it.

wheres the fun in that? Im not afraid to get my hands dirty. I'll probably buy the pig pre-gutted anyway to save time.

Id like to know if there is a special glaze to go over the skin or is just using olive oil and rubbing salt is just the norm?

I also like using my weber bbq. I love webers and the way the can smoke meat its just a fantastic smell.

I'd be inclined just to go with the oil/ salt combo and I'd be cutting the skin. Some people just poke holes in it to allow the fat to drip out, I'd be more inclined to score it aswell. Helps with the oil/salt and crackling I think.

But from what I hear - the gut cavity really needs to be filled with something that will keep everything moist, one website I read before recommended putting half a kg of butter in there along with your herbs/ stuffing.

cross hatching is the way with the skin, and a bit or rosemary with the oil and sea salk is a winner

LOL, I'm a pork addict, and pork from the weber is just amazingly awesome. Haven't tried spit-roasted pork yet but would definitely be willing to give it a go at some stage.

You need to get organised and set a date for a pork feast dude. Set it up for Sandown or Bathurst thats coming up. That way u have something to look forward to when ford win.

Now that's not a bad idea at all - set it up for a public park somewhere, organise a bigscreen tv and the caterers with the pig on the spit and a bar. Could even get V8 promo girls in skimpy clothing and a couple of nice cars, hell maybe even a daytona simulator or two linked up for some multiplayer racing action.

Only problem I can see so far is finding a park we can legally drink in, the rest would be easy :P

What about at Moana Beach? If ya game to take ya car on the sand, I have seen people BYO food and beverages on the beach. Dunno how the logistics of it would work, but the idea sounds good.

Otherwise one of the parks on the esplanade at pt noarlunga or seaford could be the go. Im not sure on the dry zones there either. Could be worth investigating.

Um yeah sort of a hijack, but still on topic of bbq's.

I reckon if pork or other meat is involved, you should have most SA members showing up. The hard part is making sure ORDER is maintained in a public park.

Back on topic. I called the mrs today to go to the butcher and buy a 3kg slab of pork with the skin on for this weekend to feed 3 blokes as well as roast taytoes and some mushroom sauce . What we cant eat, I will take to work for lunches.
