Like most classic prices vary hugely..to the point of it being silly.
You need to set a budget and work to that. Buy a cheapy and you might spend more on body/panel..but then again you will know it was done right.
There is usually a happy medium, id say anywhere from $4000-8000 for a decent 2 door would be a starting point.
I too was keen on an escort project but went with the Alfa instead, working out great so far.
