Is ceramic coating worth doing on a reasonable 6 year old car? It was done when it was new but I’m sure it’s worn off by now. The ceramic coating itself isn’t expensive but obviously involves more work.

No reason why you wouldn't re-ceramic the Territory. If you are already going to go to the effort of polishing it, then you may as well re-coat it.
In terms of paint chips, I would polish first then touch them up, then coating.
